Grilled corn on the Cob

One of my favorite parts about summer is the produce. Seriously everything just tastes so much better! Strawberries, watermelon, tomatoes, cucumbers...corn on the cob. Yum!

Of course the nice cheap prices also help! This week I can get watermelon for .17 a lb and 5 ears of corn for a $1. You can't beat that! Fresh, yummy, healthy and cheap? Yes,please!!

While browsing through a Kraft Food and Family magazine I found a recipe for cooking your corn on the grill. Now I am not a "grill master" but my hubby was willing to make it for me.

I love how some stores put a big garbage can out so that you can shuck your corn while you are there. If you do that though...your kids miss out on the fun of shucking it. When I was younger I remember having to go outside with a garbage bag and shuck corn. It is only fair that my kids have the same memories right?!

Grilling corn on the cob is easy shmeazy. Seriously.

Here are the steps:

1. Have children shuck corn...or do it yourself I guess.
2. Rinse and pull off any leftover silk.
3. Wrap in foil.
4. Hand them to your husband.
5. Heat your grill to med. high and grill for 15-20 minutes.
6. Top with butter and whatever toppings you like...like parmesan butter.
7. Devour.

Seriously so good and my kids, who love corn on the cob anyway, just chow it down. Delish!

Pina Colada Salad

I love cookbooks. I do. I also love cooking magazines. There is just something about recipes I guess (:

I recetly purchased a new cook book, "Real Mom Kitchen". It is full of fun & easy recipes.

One day while waiting in the car rider line for my kiddos, I found the recipe for this Pina Colada salad.

I love coconut but my husband doesn't. My kids are half and half. Some do, some don't. So I have to remember that if I make a recipe with coconut...I may end up having to eat the whole thing by myself.

This salad was so yummy and the kids helped me gobble it up. Even though spring isn't quite here, this salad reminds me of summer!

Pina Colada Salad recipe:

1- 12oz. container of whipped topping  (I used fat free)
1- (3.4oz)pkg instant coconut cream or vanilla pudding mix ( I used vanilla)
3-(6oz) pina colada yogurts
2-3 bananas, sliced
1-20 oz can pineapple tidbits, drained ( I didn't drain mine and I really wish I would have, mine was really runny)
toasted coconut, (optional)

In a large bowl, mix whipped topping, dry pudding mix and yogurt.

Mix well to dissolve pudding mix.

Refrigerate mixture for at least an hour.

Mix in bananas and  pineapple just before serving.

Sprinkle top with toasted coconut

cooking Thursday

I have been visiting the sites of those who are participating and all I can say is yum! There are some yummy recipes being linked. I will definatley be trying the Beef & Brocoli and the Coconut pie this week! If you want to check them out, you can go to Diary of a Stay at Home Mom

I had a request for my recipe for Caramel Apple Salad. It is such a quick and yummy fruit salad. My kids love it. So it is totally kid approved.

Funny story about the recipe, I was visiting my Mom right before we moved to Guam. I found the recipe in a magazine at her house. I got permission to rip it out. I did and carried it in my carry on all the way to Guam just so I could make it! (:

I originally posted this over a year ago, so I am just going to link to the recipe. If you make it let me know how you liked it! You can find the recipe here

LUAU!

(He was very proud of his work!Although he wondered why he was getting his picture taken!)

(Don't those look yummy?! They were!)

(vegi trays)

(Putting kabobs together)

A long time ago, we decided to only have friend birthday parties every other year. When it is their family party, we keep it nice and simple. We had two big bashes this month. It left me EXHAUSTED! I think that is why we only do them every other year!

My son Connor turned 8 and decided to celebrate with a luau! I had the idea to do Hawaiian pizza's but he wanted to grill. His favorite? "Chicken on a stick". So kabobs it was!

This was the menu for the party:
Kabobs
hot dogs (since kids can be so picky about food (:)
chips/dip
orange slices
vegi trays
apples and toffee dip
bacon &ranch pasta salad
potato salad
deviled eggs
cake
ice cream

It was all very yummy and now we get to enjoy the leftovers!

For kabobs we had steak and chicken, with purple onions and peppers. We also had some that were just meat.

Toffee dip (sooo yummy!)
1 8 oz. brick of cream cheese,softened
1/2 cup brown sugar
1/4 cup white sugar
1 tsp vanilla
1 pkg of Heath/Skor chips

Mix well and enjoy!

Bacon & Ranch pasta Salad ( I used to just buy the Betty Crocker/Kraft kind but now I just make my own!)

1 box of large shell pasta
1 packet ranch dip mix
mayo to taste
bacon bits ( I use about 3/4 pkg) Of course you can also cook your own bacon and then cut it up
shredded carrots
frozen peas

Eat right away or serve cold.

What are your favorite recipes to serve at parties? Do you like to keep it easy or go all out?
