Pina Colada Salad

I love cookbooks. I do. I also love cooking magazines. There is just something about recipes I guess (:



I recetly purchased a new cook book, "Real Mom Kitchen". It is full of fun & easy recipes.

One day while waiting in the car rider line for my kiddos, I found the recipe for this Pina Colada salad.

I love coconut but my husband doesn't. My kids are half and half. Some do, some don't. So I have to remember that if I make a recipe with coconut...I may end up having to eat the whole thing by myself.



This salad was so yummy and the kids helped me gobble it up. Even though spring isn't quite here, this salad reminds me of summer!

Pina Colada Salad recipe:

1- 12oz. container of whipped topping  (I used fat free)
1- (3.4oz)pkg instant coconut cream or vanilla pudding mix ( I used vanilla)
3-(6oz) pina colada yogurts
2-3 bananas, sliced
1-20 oz can pineapple tidbits, drained ( I didn't drain mine and I really wish I would have, mine was really runny)
toasted coconut, (optional)

In a large bowl, mix whipped topping, dry pudding mix and yogurt.

Mix well to dissolve pudding mix.

Refrigerate mixture for at least an hour.

Mix in bananas and  pineapple just before serving.

Sprinkle top with toasted coconut

Mmmm. Sounds easy and totally yum. I'm going to have to try it!

I have an even easier receipe..lol we call it FLUFF
1-20oz can of crushed pineapple
1-package of instant coconut cream instant pudding
MIX together.
Then Add in
1 can drained fruit cocktail
1 small can drained mandarin oranges(optional)
2 cut up banana's (optional)
2 handful or so of small marshmellows
Mix all together.
1-12oz coolwhip
Mix all together again.

You can eat instantly or refrigerate for 1 hour or so before eating.
AS LONG AS YOU drain the fruits, it won't be runny, the next day either.
