Menu Plan Monday
It is the first week of summer! So excited to be heading out to the Grand Canyon tomorrow.
I enjoy camping but I have a few requirements. Really just two. Indoor plumbing & showers. I can handle just about everything else.
I get nervous when it comes to camping and food because of the lack of refrigeration. I have to get used to it though because our family is not going to stop camping any time soon!
So here is my weekly meal plan...camping version!
Monday:
B: bananas, dry cereal (we finished off the milk and I am not buying more until we get home!)
L:on the road
D: hot dogs, chili, salad and of course...
SMORES!
Tuesday:
B: pancakes, eggs and bacon
L:sandwiches, chips & fruit
D: bbq chicken kebobs , fruit and grilled corn
Treat: fruit cobbler made in the dutch oven
Wednesday:
B: breakfast casserole with sausage/bacon, potatoes, eggs
L:sandwiches/hot dogs
D:in town
Treat: woof 'ems
Thursday:
B: pancakes/cereal
L:sandwiches/hot dogs (just depends as we are busy during the day!)
D:taco salad
Treat: whatever is left :)
Friday:
B: cereal/leftovers
L:in town
D: leftovers
Saturday:
B: whatever is left
L:on the road
D: at home...with electricity! We will probably stop and grab a pizza or something!
So that is it! I am looking forward to family time. Even though my teenage daughter informed me that, "I will probably spend the whole time wishing I was at home." Ahhh I can just feel the love!

Menu Plan Monday
It has been way too long since I participated!!! I have times when I do really well, and then times that I fall off the wagon, usually when we are busy.
But what better time to be organized and prepared than when you are busy right?! So here goes...
Monday:
B: smoothies & toast
D: spaghetti & meatballs with green beans and garlic bread
Tuesday:
B: cereal & fruit
D: chicken tortilla soup (crockpot)
Wednesday:
B: scrambled eggs & muffins
D: pulled pork sandwiches, fruit & fries?
Thursday:
B: cereal & fruit
D: sausage & noodles, vegi
Friday:
B: kids pick whatever they want
D: pizza (or something as equally easy!)
Saturday:
B: something quick as we have to be out of the house early
D: breakfast for dinner
Sunday:
B: leftovers from the night before
D: ham in the crock pot, funeral potatoes

Menu Plan Monday
My husband has been gone for over 5 months. Five long, long LONG months. Well guess what?
He is coming home this week. I can't say when. I can't say what time. You are not allowed to talk about troop movement...although it is just him so maybe it doesn't matter....
Not one to take any chances, I will just say this week.
Now while life has been anything but easy with him gone, there is a benefit...dinners.
My kids would be happy to eat pizza or pancakes or macaroni and cheese every single night, my husband... not so much. Hard to believe, I know.
I need to start really, really planning my meals again. Making sure there is plenty of variety, man friendly and family friendly food.
I am so excited to have family dinners again. To share our day around the table.
Right now I am perusing all my cookbooks, looking through my pantry & freezers/stockpile etc.
So here is my plan for the week....
Monday:
B: eggs, biscuits & sausage,
D: homemade "beefaroni" salad, baby carrots
Tuesday:
B: cereal & fruit
D: crockpot enchilada chicken, corn on the cob, rice
Wednesday:
B: waffles (from the freezer)
D: eat out
Thursday:
B: cereal/leftovers
D: salmon, pasta slad, fruit
Friday:
B: muffins and smoothies
D:grilled chicken & hamburgers/hot dogs, potato salad
Saturday:
B: pancakes, bacon etc (we always do big b-fasts on Saturdays so I can put some away for the week)
D: leftovers/pizza

Menu Plan Monday
The other day I mentioned on my facebook page, that I have been in a total food rut. Considering how many cookbooks I have, that is kind of sad!!
With my husband gone, it is so easy to turn to kid favorites: hot dogs, pizza, chicken nuggets etc. But while it may be convenient, it is certainly not good for us!!
I decided to plan out this week and even though it is an "off" week, I am happy that we are getting out of our rut! So here goes:
Monday:
B: pancakes, sausage & hot chocolate
L: fix your own
D: at a church bbq
Tuesday:
B: leftover pancakes or cereal
L: fix your own
D: chili pie casserole
Wednesday:

I am rrrreally bad about staying on schedule during the summer. So this Mom is sooo ready to get back in gear. This also includes planning dinners. I have been so bad over the summer. :(

Menu Plan Monday (5/16)
This week is going to be BuSy. I know I say that a lot but it is very true.
So in an attempt to avoid to many mcDinners this week, we are going to be doing quick and easy meals. Here we go:
Monday:
Breakfast- cinnamon swirl bread toast, bananas & yogurt
Dinner- mini meatloaves, potatoes, green beans and rolls
Tuesday:
Breakfast: oatmeal, strawberries
Dinner: ham, brocoli and cheese casserole, leftover rolls
Wednesday:
Breakfast: waffles, sausage
Dinner: cresant dogs or leftovers (this is one of my busiest days this week!)
Thursday:
Breakfast- cold cereal, muffins
Dinner: soup & sandwiches
Friday:
Breakfast- kids choice
Dinner- we are going to be gone this night from 3-8 so this will probably be a McDinner
Saturday:
Breakfast-cinnamon rolls, fruit
Dinner: taco cups, rice and corn
To be honest, I am going to be really impressed if I get anything done this week. So wish me lots of luck. Something about the end of the school year brings a ton of activities, doesn't it?!

Let me off!!
Let me off this cRaZy ride!! Life has been so busy at my house you wouldn't believe it!!
This past week, just had me running around like a chicken with it's head cut off! My son's 10th birthday and his party, Mothers Day, Teacher Appreciation week, Military Spouse Appreciation Day, kids' testing, early morning band practices, appts, Lego League....Yeah. Doesn't that list make you want to cringe a little? Or a lot!! You know what the scary part is? This is not even all of it! Just makes me want to head back to my bed and go back to sleep!
The next few weeks are going to be busy for sure. What is it about the end of the school year, that every day has to be packed?!
I have a dry erase board on my fridge. Every day I write what we ate for dinner. Not what I PLANNED but what we ACTUALLY ate. (BTW: this is a really good way to start menu planning) Let me tell you, it was not an impressive list. *sigh*
Right now, when life is at it's craziest, I think it is more important to carve out that time for family dinners. Whether it is mac and cheese or beef wellington. (Why no, no we don't serve beef wellington in this house!)
Tonight our family is going to be sitting down for honey mustard chicken, rice, bisquits and strawberries.
For the rest of my weekly plan:
Tuesday: ham (cooked in the crock pot), jello salad, rolls,
Wednesday: beef enchiladas, corn bread,
Thursday: quick fix night because of Scouts, leftovers or pigs in a blanket & french fries, and fruit

I am so excited to send my kiddos back to school on Tuesday!
I love vacations but I love routine and getting back on to a schedule.
Not to mention that I would much rather take 1 child to the grocery than 5!

Menu Plan Monday

Can I be honest? I have NO clue as to what to make for dinner this week. My husband is off for the whole week. When he is home, I always try to get as much done as I possibly can. Errands, appts etc. This week is full of goings on. I also have a lot of coupon shopping to do and my sister just gifted me with a whole bunch of food! I love FREE!!
Another week of flying by the seat of my pants is not to bad of an idea. Hopefully I can get a little more organized this coming week.

Menu Plan Monday

Normally when preparing my menu, I try to be really organized. Planning everything down to the last bite. I don't always follow it but I try!
This week I have a few things going on and so dinners will be kind of...fly by the seat of my pants. So I am making a menu-ish for this week!
If this fails miserably, I will be back to full blown organized meals!
Monday: hamburgers, potato salad, applesauce
Tuesday: chicken stir fry, rolls
Wednesday: pizza, fruit, breadsticks
Thursday: busy night!! Soup and sandwiches w/ some fruit
Friday: shopping all day for freezer cooking on Saturday! breakfast for dinner (making extras for the freezer)
Saturday: I will share the menu I am making for my freezer cooking meals later on, but I will probably let my kids have a "happy meal". The definiton of Happy meal at our house is, "whatever you can find at home that makes you happy...that's your meal!"
Sunday: roast, potatoes & carrots, rolls

The week before school starts and it is a BUSY one. Praying my husband will be home soon, but since I have no idea, my meals are planned without him :(
So this is what is on my menu for the week:
Monday: banana bread, yogurt, grapes
Lunch: pizza, salad
Dinner: grilled ham & cheese sandwiches, pears, mac & cheese
Tuesday: (early morning dentist appt. for my boys) cereal & toast
Lunch: leftovers or top ramen
Dinner: cresant dogs, french fries, fruit
Wednesday: biscuits with eggs, ham & cheese
Lunch:leftovers from dinner or quesadillas
Dinner: bbq beef sandwiches, vegi's, potato salad
Thursday: pancakes (making at least 3 batches so that some can go into the freezer for next week)
Lunch: leftovers or soup and pb & j
Dinner: pack meeting for my boys so we are either eating there or eat out
Friday: cereal and strawberry & banana muffins (recipe coming soon)
Lunch: leftovers or hot dogs
Saturday: eggs, cinnamon rolls and fruit
Lunch: up in the air! My sister might be visiting OR my hubby might be home
Dinner: same as lunch!

Ahhh another menu plan Monday. I had a forever long wait at the doctor's office today, so that is where I wrote it out! Luckily I had one of my favorite cooking magazines with me! Have you ever read Sandra Lee's Semi Homemade magazine? Lots of good ideas! I love it. Anyway, here is my menu for this week.

Menu Plan Monday

So last week I didn't end up making everything I had planned. BUT, that is ok! We ate out only once (and that was only 3 of us). I just made other things from the pantry/freezer. It's all good!
This week will be a very busy week for our family. I am praying that things will start slowing down but I am not sure when that will happen. Friday: (boys are gone camping!)

L: hoagies, pretzels, fruit snack, grapes,
D: the kids who are staying home: their pick for something special

Saturday: (boys gone until lunch)
B: scrambeled eggs w/ chopped ham, bisquits
L: kid pick
D: our son is being baptized! So we will be eating dinner at our church. Sandwich trays, fruit and vegi trays, treats
