Using up produce

The other day at church, some friends brought in their surplus lemons. I love it when people share the wealth!!

Anyway, I had planned to make lemon bars, and life got in the way...and I never made them! :( But I didn't want them to go bad.

Instead I cut them, juiced them, put the juice in a gladware, and put it in the freezer.

Freezer cooking doesn't have to be about doing an all day cooking session, it can be something small like saving your lemon juice for another day. Waste not want not right?

Look in your fruit bowl...do you have mushy bananas? Bruised apples? Instead of just tossing them, think of what you can do! Turn them into breads/muffins. Chop and flash freeze. Use them for smoothies...think outside the box!

Now I have lemon juice for when another craving for lemon bars strikes!

I love doing stuff like that! Growing up we had a lot of get-togethers where a veggie tray would be served, and my mom would make 'Cream of Parisian Soup' with the leftovers (pretty much the same as broccoli-cheese soup, only with other vegetables thrown in). If the leftover veggies are starting to look a little limp, soup is a great way to use them up.
